When Life Gives you Apples

Number one First World problem I think we can all agree on is looking up a new recipe and having to scroll through a lengthy description and tips and references and a story about a family reunion. Just give the people what they want: ingredients, quantities, cook time. And so, without further delay:

Apple Cake

Pre-heat the oven to 325

  • 1.5 cup Brown Sugar
  • 1/3 cup oil (i used olive)
  • 1 cup Buttermilk (turns out you can sub regular milk + 1 tbl spoon white vinegar - will look nasty if you let it hang out mixed)
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 2.5 cups flour
  • 2.5 cups apples - (3-4 medium apples, peeled, diced, and then some extra chopping for good measure) 

Mix all of that in the order it's listed in a big ol' bowl. I used a wisk and a plastic spoon, no machinery up in here. Spread it in a baking pan after you rub it down with butter / grease it however you want. 


  • 1/2 cup sugar
  • 2 teaspoons Cinnamon
  • 1 tablespoon melted butter 

Mix that up nice in a separate bowl and spread evenly over the top of the batter. Bake that up for about 45 minutes, or until you can poke something in the middle and it comes out clean. Cheers!
